Pineapple Tarts *Yum Yum*

In just a couple of weeks time, we will be celebrating the Lunar New Year. Lunar New Year is all about spending quality time with families and friends. You can say it’s pretty similar to Thanksgiving.

This year at the request of some family members, I’ve decided to make a popular snack called pineapple tarts. To put it simply, pineapple tarts are ‘cookies stuffed with pineapple jam’. It’s really easy to do and it taste absolutely delicious.

The main ingredients are:
- flour
- butter
- eggs
- premade pineapple jams.

What makes pineapple tarts interesting is that, you are not limited to a specific shape and size. You are free to come out with your own creations like the ones you see above.

Sandwiches

Sandwich the most easiest food to make. All you need is a few slices of white bread (whole-meal bread or other types of your prefer breads) and ‘leftovers’ or you make the meat in between. Leftovers are those liked slices of hams or bacons or fried eggs, etc etc. There are a few simple sandwich.

There is the butter and sugar sandwich. You just spread the butter and sprinkles the sugar all over the spread butter bread and dump it into the mini oven and wait for it to toast. You can see the sugar starts to boil on the butter. Yummy…

There is the luncheon meat sandwich. Just thin slice the meat and fried it and slap it between the breads with some mayo to go with it.

There is vegetarian sandwich. Just boil the leaf veggie liked cabbage or long peas then place them nicely in the center of the two slices of breads and press them tight so that none of the veggie will fall of when you bite into them.

These are the few of many kinds of sandwiches. You can try different types of recipe and you will know there are countess of ideas of sandwiches. Hahah……

Chicken Rice (serious food)

Chicken rice I believe all had eat it before unless you are in the western part (if have the chance you can try this recipe XD its nice). I learned myself how to do the Hanainess Chicken rice.

Ingredients:

1 whole chicken (best if its kampong [village] chicken), 1 lemon-grass, rice (amount depends on how many people eating), 1 large slice of old ginger, a bucket of ice-water, some vegetable if you like.

Instruction:

Firstly we need to boil the whole chicken (yup iterally a whole chicken, so find a large pot…) with the slice of ginger too. When its fully cooked, carefully using a tool to take the chicken out from the pot and dump it in the ice-water(you must be thinking that I’m doing cold dish? I can say maybe ^^;;) When the chicken is cooled down, just leave it on the plate and on the table with a cover over it so that no nothing can steal the chicken. Now on to the rice. Still remember the pot of leftover oily water that used to boil the chicken? We need that to cook the rice. After washing the rice, we pour in the oily water. Amount will be the same as you cook normal rice( eg, 1 cup of rice will need 1 1/2 cup of water). And mashed the lemon-grass and tied it into a knot to prevent it from mixing into the rice and let it be cook with the rice. If you using the electric rice cooker, your job will be done by the cooker. If you are using the old pot to boil the rice.. just be sure the rice is not burnt. When the rice is cooked just removed the lemon-grass, cut up the chicken into edible slices and you have your own home-cooked chicken rice~~ Lovely.

Mushed Food… (Don’t worry its edible)

Cooking is one of the necessary part of life. And I learned a few home cook methods from Grandma, Mum and Nanny (Nanny took care of me since I’m in kindergarden but her service ended when I’m primary 5.. sort of miss her)..

A few types of cooking methods are; boiled, fried, stir-fried, steamed, grilled and many more.

Today I wanna share a nice ‘mushed’ food with my readers which is Ketchup Egg Luncheon Meat. Sounds weird?Maybe for you but its pretty nice (although doesn’t look that nice). Ingredients we need are; 1 egg, half can of luncheon meat and 3 spoons of ketchup(more or less depends on your taste-bud).

First we need to dice the luncheon meat into cubes. Then boiled them in water. Pour the hot water away then put the fire to low fire so that it will not burn the meat. Then add in the ketchup and stir them nicely so that each of the meat gets covered by the ketchup. Then lastly beat in the egg and wait for it to cook. Ta-da~ we have finished the Ketchup Egg Luncheon Meat. Looks mushed but taste nice. Good for Babies and Elders. Ahh~~ Yum yum….
